Greek Lentils Soup
|1/2 kg Greek lentils
6 cloves of garlic
1/2 can diced tomatoes
3 bay leaves
1 cup of olive oil
2 tablespoons of wine vinegar
Preparation : You must let the lentils sit in water overnight
On to cooking :
Drain water from lentils and wash with fresh water. Clean garlic cloves and onions. Boil one liter of water and add the lentils, the tomatoes and diced tomatoes, the garlic cloves and the bay leaves.
Let all boil for one hour on medium heat/fire.
Towards the end (approximately 10 minutes before the hour is up)remove the bay leaves and add the olive oil and a pinch of salt and pepper. When the hour is up add a pinch of Greek oregano and two tablespoons of wine vinegar. Your are now ready to serve (4 servings).
